There’s a huge difference in the machinations of songwriting to writing a lengthy book, therefore, you are automatically not giving yourself much arbitrary protection by making such compare.
Paul Simon has no more than 4 verses or so to footer around with and it’s very possible that he reviewed his writing at a later date and considered that he could well have done a better job.
However, I’m sure his dissatisfaction was derailed by the royalty cheques.
Leonard Cohen was known to jiggle the lines of a song around for years until it reached his level of personal satisfaction. I think Leonard wrote better songs because of that, too. I always considered Simon, even though I enjoy some of his stuff, to be a tad too nursery-rhymey just a bit too often.
